Truth be Told

Well, this is the part where I spill the beans and tell you that I am not much of a cook. I blog about good food I find, but not so much good food I’ve made. I would like to get more into cooking and baking, but I have had some serious gluten-free catastrophes therefore I choose the already made food. Maybe this is why I am dying for a Whole Foods? Anyway, being as though I am approaching adulthood I need to become a good, at best, gluten-free food maker? If you guys know of some rockin GF recipes leave me a comment and I will try every one of them!!! TTYL

Dear gluten-free Diary

Hey gluten-free people sorry I haven’t posted anything in way, way to long. In my absence I acquired some knowledge about a topic that I have mentioned in almost every post I have written! What is it you may ask? Udi’s bread! I thought that Udi’s only came as white or whole grain sandwich bread. Well, I am pleased to say I was mistaken. In a recent trip to Yokes Fresh Market they not only carried Udi’s sandwich bread,but Udi’s muffins, bagels, and pizza crust. Although we have not gotten a Whole Foods yet I am glad the gluten-free community has gotten a little more attention. TTYL

Dear gluten-free Diary

Gluten-free people I am sure you have noticed that gluten-free food is so, so, so much more expensive than gluten filled food. Why? Have you ever wondered why? I, while trying to find an answer, found this site with statistics about how much more expensive gluten-free food really is. It’s crazy. It’s not like we chose to be allergic to wheat. It chose us………..well maybe not that deep are bodies just don’t react well with gluten. Should we be punished for this? I believe that food should be priced the same gluten-free or gluten-filled.

I absolutely hate when I buy a cake or cookie mix bake it and……….hate it! It is a total waste of money! Then your stuck at square one again praying that the next one you try is at least decent. I wish that in Spokane we had a store where there were already baked gluten-free foods. Not only is it easier, but it’s less expensive. Another reason why we need a Whole Foods!!!

Anyway, peoples lives are hectic we don’t have time to constantly bake and try and try and try to find the perfect  gluten-free thing. I found the perfect bread with Udi’s, but everything else gluten-free I am constantly on the search for. At Whole Foods they have already baked gluten-free goods. You know it is baked how it’s supposed to be because they are pro’s there. They know how to bake their gluten-free foods. Your not thinking what if I baked it longer or shorter? Would that make it taste better? You like how it taste or you don’t.

To sum this up, it is wrong that GF food is so expensive. It would be so much easier for GF people to find the perfect gluten-free foods and not have to worry about the whole in your wallet getting bigger. Today I had to throw away these gluten-free bagels because they made me feel sick. It was a very expensive mistake to buy them in the first place, and makes me want to crap my pants to have to throw them away! I need to just stick to the Glutino bagels.

Dear gluten-free Diary

Alright my gluten-free people I am going to tell you about my gluten-free life,thus far, has been and how it has changed my eating healthy life, and forever will. Sorry run on sentence. Anyway, before I became gluten-free I didn’t realize how much gluten I was eating. In school especially I have come to realize it the most. People in my class often bring cookies, brownies,…etc for their birthday. As any other Celiac would do you kindly say no thank you, and pass on that yummy treat. Well, this ritual recently got me thinking about how much healthier I am eating being gluten-free.

Think about it, as a GlutenFreeGirly or a GlutenFreeGuyly?… you are always on the hunt for even a trace of gluten in anything and everything you put into you mouth. Think about how much healthier this transformed your diet. It gets you reading labels, looking at ingredients, realizing what your really putting into you body.

For my food ritual..if there is such a thing, I always look at the nutrition facts before I buy anything even if it’s gluten-free. Just because it says it’s gluten-free doesn’t mean that its everlasting goodness that isn’t ever bad for you. There will always be food that is better for you than others whether it’s gluten-free or gluten-filled.

DEPRIVED…and need to be REVIVED!!!

Have you ever been deprived of something people? I’m not talking when your mama takes your cellphone away…..I’m talking something much, much bigger. Okay wait maybe not that big? Well, big for me. Sorry hyper :). Anyway, WE ARE OUT OF UDI’S BREAD IN SPOKANE!!! Let me explain this in other terms hey dude WE ARE OUT OF UDI’S BREAD in the “Can” (Spokane) yo! If you have read my blog before you know my crazy obsession with Udi’s gluten-free bread. If you haven’t I recommend you read my earlier post about this fascinating topic known as awesome GF bread!!!

In the “Can”  there is only ONE place where Udi’s bread is found, and sadly that ONE place is out of stock….sigh. This just shows you how badly we need a Whole Foods in Spokane! I am deprived and having to deal with other GF bread that tastes like cardboard, gives me stomach aches, leaves me unsatisfied, and having to deal with an ugly sandwich for school….ugh!

Why Don’t Producers Make GF baking and cooking shows?

     Have you ever wondered why producers don’t  make gluten-free cooking or baking shows? I have always wondered why. There are so many shows about how to cook this and bake that, but it is never geared toward gluten-free. As Celiac Disease and Gluten Intolerance are becoming more prevalent I am surprised that nothing like this has happened yet. 

      On the Food network’s website they show awesome gluten-free recipes, but wouldn’t it be nice if they could show you how to make it live. I, along with millions of gluten-free people, would tune in everyday to see a new gluten-free recipe. Wouldn’t it be the best thing in the world if the Food network produced a gluten-free cooking and baking show? 

     I know that once in a while there will be a gluten-free cooking day on the Food network, but consistency is all I am asking. Just think of all the yummy food they have on their shows. Wouldn’t it be cool if they had a show to show us how to make  all that yummy food GF.  I just had this thought in my head and thought you all might feel the same way. TTYL

Letter to Whole Foods

Hey Everyone,

Alright, as I have mentioned in earlier post I live in little old Spokane. Here in Spokane the only gluten-free grocery store with a decent variety of GF foods is Huckleberry’s. Don’t get me wrong I love Huckleberry’s, but it makes me sick every time I go to Seattle because they have Whole Foods, Trader Joe’s, and a ton of other gluten-free food stores. I have heard talk about maybe getting a Trader Joe’s here, but not a Whole Foods. So this got me thinking, what if I wrote a letter to Whole Foods asking if they could put a store in Spokane. I’m getting tired of bringing a cooler and extra luggage every time I go to Seattle. Every GF person I’ve talked to does the same. We NEED A WHOLE FOODS!! I know that people who aren’t even gluten-free want one in Spokane. If you have any ideas of what I should say let me know. I’ll post my letter as soon as I write and mail it. TTYL

Hello World I Have A Gluten Intolerance

I am sure you have all felt like me before when I say…HELLO WORLD I HAVE A GLUTEN INTOLERANCE or…….HELLO WORLD I HAVE CELIAC DISEASE. Can you count how many times you have had to tell people about your new diet? Well, I have only had my allergy for 3 years, but I can’t count how many times I’ve had to say it. Often times when I say I have a Gluten Intolerance I get a what? I then explain with simple terms like no bread for me, or no donut today or any day. I then get reactions like that sucks, or I feel bad for you. I smile and say it’s okay because I feel so much better without gluten in my diet. I feel like I have a badge of   “honor” that is permanently pinned on me for life. I thought this looked like the perfect badge and decided to share it. I’m wearing my badge today are you? 🙂

Newly Wheatless

For all my peeps that are newly wheatless I am here to tell you life goes on GF! I’ve eaten a lot of bad GF food that I plan to spare you from. Coming soon is a list of the good, bad, and the ugly! My way of sparing your taste buds and your wallet.  Sorry to say, but there is lots of GF food that has no business making its way from the grocery shelf to your’s at home.    TTYL
